Snowy Palms Resort Vietnamese Style Peanut Sauce

This sauce is very versatile and it was refined over a number of years to become what you see below.

½ cup peanut butter (crunchy or smooth, your choice)
1 tbsp sesame oil (pure oil, not sesame flavoured oil)
3 -4 garlic cloves, pressed
1 -2 Tbsp sambal oelek (chilli paste) more of you like it screaming hot, like me

2 Tbsp ketchup
½ - 1 cup chicken broth (depends on how thick you like it, I use 1 cup)
1 tsp Sugar
¼ cup hoisin sauce

1 Tbsp fish sauce (nuoc mam)

Heat the oil in a small saucepan over medium heat.  When the oil is hot add the garlic and sauté for 2 minutes, do not burn.

Add chili paste, ketchup, chicken broth, sugar, peanut butter and Hoisin sauce and whisk to dissolve the peanut butter.  Bring to a boil, turn down heat to low and simmer for 5 minutes.

If the sauce is too thick add more chicken broth and stir and heat until bubbling.

Serve warm, not hot.

Now a word of caution:  When you are simmering this it will bubble and splatter all over your kitchen, so pay attention and if a splatter lands on your person it will hurt, immediately, so again, pay attention. If you don’t pay attention make sure you have a bag of ice for the burns close at hand. Or the number to 911 written down close by.

This sauce is a wonderful thing, a Divine gift perhaps, a creation of a genius no doubt and a wonderful thing to serve family and close friends.  In our home it is the only accompaniment to Salad Rolls, in fact we make Salad Rolls to act as the delivery vehicle for Peanut Sauce.

The recipe above is a small batch.  Normally when I make it, I double or triple the recipe to allow enough to satisfy any starving guest or vagrant that happens to find a place to sit at the dinner table. Particularly my darling Kristine, who, left unattended, will eat enough of this to make her look like Mr. Peanut or Ms Peanut as it were. 

Kristine has allowed me to state that in her expert opinion my Peanut Sauce recipe is world class if not world leading and pity the person whose threat of anaphylactic shock prevents them from tasting this fine creation. So take it from Kristine, who confirms that properly assembled you will not taste a better Peanut Sauce in this Galaxy.  Period.
