Snowy Palms Resort Asian Style Braised Shredded Pork

4 lbs pork shoulder, cubed 2”x2”
¼ cup soy sauce
¼ cup Asian fish sauce
3 Tbsp white sugar
¼ cup sesame oil
3 Tbsp Sriracha Sauce

1 tsp white pepper

Place all ingredients into a bowl and mix well.  Place in fridge overnight.

Place mixture into a casserole pot and cover with lid, put into 350 degree oven and bake for 3 hours.  Every ½ hour, stir and toss the mixture so it does not bake into one big lump. 

At about 2.5 hours check for tenderness by taking a cube and pressing it with a fork, if it breaks into shreds it is done.  You want to get it to shred easily to ensure yummy goodness.

Pour cooked pork into heat proof colander to drain off liquid and set liquid aside to settle, remove the fat that separates, allow the now fat-free liquid to cool for 15 minutes. 

Place drained pork into a bowl and mash with the back side of a fork until all cubes have surrendered themselves to the carnage and now are completely shredded. Pour remaining fat-free liquid over the shredded pork and toss to incorporate.

Use in salad rolls or serve warm with some hot sauce as an entree with a side dish.
